Recipe: Broccoli Cheddar Soup

Broccoli Cheddar Soup

Ingredients:
4 tablespoons butter
1 small onion, finely chopped
2 cloves garlic, minced
¼ cup all-purpose flour
2 cups chicken or vegetable broth
2 cups milk (or half-and-half for richer soup)
3 cups fresh broccoli florets, chopped
2 cups sharp cheddar cheese, shredded
Salt & black pepper, to taste
Optional: a pinch of paprika or mustard powder

Instructions:
1. In a large pot, melt the butter over medium heat. Add the onion and cook until soft and translucent, about 4–5 minutes. Stir in the garlic and cook for 30 seconds.

2. Sprinkle the flour over the mixture and stir constantly for 1–2 minutes to create a roux.

3. Slowly whisk in the broth, then the milk, stirring until smooth. Bring to a gentle simmer.

4. Add the broccoli and cook until tender, about 10–15 minutes.

5. Reduce heat to low and gradually stir in the cheddar cheese until melted and creamy.

6. Season with salt, pepper, and any optional spices. Serve hot.

**Serving Suggestion**
This soup pairs perfectly with crusty bread, a side salad, or served in a bread bowl for a classic comfort meal.
