Ingredients
For the Crust:
2 cups all-purpose flour
½ cup powdered sugar
¼ tsp fine sea salt
12 Tbsp unsalted butter, cold and diced
For the Filling:
¾ cup light brown sugar, packed
½ cup honey
12 Tbsp unsalted butter
¼ cup heavy whipping cream
¼ tsp fine sea salt
1 tsp vanilla extract
3½ cups coarsely chopped pecans (about 14 oz)
Instructions
1. Preheat oven to 350 degrees (175 C)
2. Line a 9×13 inch baking pan with parchment paper, leaving a bit of overhand for easy removal
3. In a food processor, pulse together the flour, powdered sugar and salt.
4. Add the cold diced butter and pulse until the mixture resembles coarse crumbs
5. Press mixture firmly into the bottom of the prepared pan.
6. Bake for 20-22 minutes until lightly golden
7. In a medium saucepan, melt the butter over medium heat.
8. Add brown sugar, honey, and cream
9. Stir constantly until smooth
10. Bring to a gentle boil for 1 minute, then remove from heat
11. Stir in vanilla, salt and chopped pecans
12. Pour the pecan filling evenly over the warm crust
13. Let bars cool completely in the pan before lifting out and slicing into squares or rectangles
