Oven-Fried Stuffed Potatoes 156

Recipe by Mandie Romano

Craving the crispy, comforting goodness of fried stuffed potatoes but without the guilt and mess of deep-frying? Look no further! These oven-fried stuffed potatoes are the perfect solution. They deliver all the satisfying flavor and texture you’re looking for, with a healthier twist that makes them a winner for weeknight dinners or a crowd-pleasing side dish.

This recipe takes the classic baked potato to the next level, transforming simple russets into a flavor explosion. Imagine a fluffy, creamy interior, perfectly seasoned and bursting with cheddar cheese, crumbled bacon, and a hint of sour cream. Then, picture that filling nestled inside crispy, golden-brown potato skins. Are you hungry yet?

Ingredients:

• 4 large russet potatoes
• 2 tbsp olive oil
• 1/2 cup sour cream
• 1/2 cup shredded cheddar cheese
• 1/4 cup cooked bacon, crumbled
• 2 green onions, chopped
• Salt and pepper to taste
• 1/4 tsp paprika (optional)

Instructions:

1. Preheat your oven to 400°F (200°C). Pierce the potatoes with a fork (this prevents them from exploding!) and bake them directly on the oven rack for 45-50 minutes, or until they are tender.

2. Once the potatoes have cooled slightly, carefully cut them in half lengthwise. Using a spoon, scoop out the flesh, leaving a small border of potato inside the skin to maintain its structure.

3. In a bowl, mash the scooped-out potato flesh with sour cream, cheddar cheese, crumbled bacon, salt, and pepper. This is where the magic happens, so don’t be shy with the seasonings!

4. Carefully stuff the potato skins with the creamy, cheesy mashed potato mixture. Place the stuffed potatoes on a baking sheet.

5. Drizzle the stuffed potatoes with olive oil and sprinkle with paprika (if using) for a touch of smoky sweetness and enhanced color.

6. Bake for an additional 15-20 minutes, or until the filling is heated through and the edges of the potato skins are golden brown and crispy.

7. Remove from the oven and top with freshly chopped green onions for a burst of freshness. Serve immediately and enjoy the deliciousness!

These oven-fried stuffed potatoes are a guaranteed crowd-pleaser. They are easy to make, adaptable to your taste, and a healthier alternative to frying. So, fire up your oven and get ready to enjoy a truly satisfying and delicious meal!
