Spring Break Burrito Bowls 153

Spring Break is all about relaxing, and this burrito bowl keeps things easy, cheap, and delicious. With minimal cooking, no fancy kitchen gear, and simple ingredients, it’s perfect for college students who want a fresh, filling meal without the hassle. Plus, it’s totally customizable. Whether you’re craving something light or hearty, this dish lets you mix and match with what you have on hand.

Ingredients:

1 cup cooked rice (microwaveable rice works!)
1 can black beans, drained and rinsed
1 cup cooked chicken (or tofu for a veggie option)
½ cup salsa
½ cup shredded cheese (cheddar, Monterey Jack, or Mexican blend)
½ cup canned corn, drained
1 small avocado, diced (optional)
¼ cup sour cream or Greek yogurt
½ teaspoon chili powder (optional, for extra flavor)
Salt & pepper to taste
Tortilla chips for crunch (optional)

Instructions:

Cook your base: If using microwave rice, heat it up according to package instructions. Otherwise, cook rice on the stove.

Heat the beans & protein: Microwave the black beans and chicken/tofu for about 1 minute or heat in a small pan with a little oil. Add chili powder if using.

Assemble the bowl: Layer rice, beans, chicken, salsa, cheese, and corn in a bowl.

Top it off: Add avocado, sour cream, and crushed tortilla chips for extra crunch. Season with salt & pepper.

Enjoy! Eat it as a bowl or scoop it up with chips like a dip. Serves 2.
