Berry Bliss Chocolate Mousse 150

Valentine’s Day calls for something indulgent, romantic, and deceptively simple to make. This Berry Bliss Chocolate Mousse is rich, velvety, and requires no baking, perfect for impressing a special someone or treating yourself.

Ingredients

6 oz dark chocolate (70% cocoa or higher), chopped
1 cup heavy cream, divided
2 tbsp granulated sugar
½ tsp vanilla extract
2 egg whites
1 pinch salt
½ cup fresh raspberries or strawberries (plus extra for garnish)
1 tbsp raspberry or strawberry jam (optional)

Instructions

Melt the Chocolate
In a heatproof bowl, melt the chopped chocolate over a double boiler or in the microwave in 20-second intervals, stirring until smooth. Let it cool slightly.

Whip the Cream
In a separate bowl, beat ¾ cup of the heavy cream with 1 tbsp sugar and the vanilla extract until soft peaks form. Set aside.

Whip the Egg Whites
In another clean, dry bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the remaining 1 tbsp sugar and continue beating until glossy and stiff.

Fold It All Together
Gently fold the melted chocolate into the whipped cream until combined. Then, carefully fold in the egg whites, keeping as much air as possible for a light, fluffy mousse.

Layer with Berries
Spoon a layer of mousse into serving glasses, followed by a layer of fresh berries and a drizzle of jam if using. Repeat with another layer of mousse.

Chill & Serve
Refrigerate for at least 2 hours before serving. Garnish with extra berries and, if desired, a dusting of cocoa powder or shaved chocolate. (Serves 4)
