Leftover Stuffing Muffins

Recipe by Mandie Romano

Thanksgiving has passed, and your fridge is overflowing with the remnants of a bountiful feast. While turkey sandwiches are a classic standby, why not shake things up with an innovative recipe that reimagines your holiday leftovers? Enter Leftover Stuffing Muffins—a delightful combination of fluffy baked eggs, stuffing, and whatever additional ingredients you have on hand. These scrumptious muffins not only taste incredible but also provide a convenient, portable breakfast option that can be made ahead of time.

Imagine a bite-sized breakfast that captures the essence of Thanksgiving in every mouthful. These muffins are reminiscent of those trendy egg bites you might find at your favorite café, but what’s special about them is the use of your holiday stuffing as a base. By incorporating turkey, and spinach, or other vegetables, you create a dish that’s both hearty and wholesome—perfect for shaking off any Thanksgiving burnout.

The great thing about these muffins is their flexibility. The possibilities are nearly endless when it comes to mix-ins, so you can easily customize each batch based on what you have in your fridge.

While the core of this recipe involves leftover stuffing, here are some exciting ingredients that can easily be added into the mix, providing both flavor and texture:

• Chopped Broccoli: Adds fiber and a beautiful green color.
• Chopped Ham: A great alternative to turkey and enhances the umami flavors.
• Roasted Sweet Potatoes or Butternut Squash: Brings a hint of sweetness and extra nutrients.
• Chopped Green Beans: Adds a crunch and freshness.
• Mushrooms: For an earthy flavor boost.
• Corn: Sweetness and color that brighten up your muffins.
• Cheese: Enhance the richness with cheddar, brie, mozzarella, feta, or goat cheese.

No matter what you decide to add, just remember to chop everything into small pieces for even cooking.

Ingredients

2 tsp butter (for greasing the muffin tin)
3 cups prepared stuffing or dressing
1 cup chopped turkey or ham
1/4 lb. frozen spinach, thawed and well-drained
6 large eggs
2 Tbsp milk
1/4 tsp salt
1/4 tsp freshly cracked pepper

Instructions

Preheat your oven to 375 degrees Fahrenheit. Grease a muffin tin with butter, oil, or non-stick spray to prevent sticking.

Prepare the spinach: If using frozen spinach, thaw it completely and squeeze out as much water as possible.

Combine the stuffing: In a mixing bowl, gently combine the prepared stuffing, chopped turkey or ham, and spinach. It’s essential to stir carefully to avoid breaking down the stuffing too much.

Distribute the stuffing mixture: Spoon the stuffing mixture into the prepared muffin tin, filling each well but keeping the stuffing loosely packed to allow space for the egg mixture.

Whisk the eggs: In a separate bowl, whisk together the eggs, milk, salt, and pepper.

Fill the muffin wells: Pour the egg mixture over the stuffing, starting with two tablespoons per well, then add more as needed until all of the egg mixture is used. Don’t worry if it doesn’t completely cover the stuffing; the egg will puff up while baking.

Bake: Set the muffin tin in the oven and bake for 25-30 minutes, or until the muffins are golden brown and crispy on top.

Cool and serve: Allow the muffins to cool slightly before running a knife around the edges. Carefully remove each muffin from the tin and serve them warm.

These Leftover Stuffing Muffins are not only a delicious way to repurpose your Thanksgiving leftovers, but they also make for a quick and hearty breakfast during the busy days that follow the holidays. With their charming single-serving sizes, they are perfect for on-the-go meals or a leisurely brunch at home. Embrace your creativity in the kitchen, and let your leftovers shine in this delightful new recipe!
